    ANTIOXIDANTCAPACITY

    The high content of polyohenol compunds found in acai is directly responsible for the berry's antioxidants properties, playing an important role fighting oxidative stress caused by the action of free radicals. Anthocyanins are found in over 300 substances in nature. Two of them (Cyanidin 3-glucoside and Cyanidin 3-rutinoside) are predominant in acai, providing to the fruit the deep purple characteristic color, which is preserved in the freeze dried acai. In addition to the anthocyanins, other polyphenols improve the antioxidant strength of acai that is measured by the Oxygen Radical Absorbance Capacity (ORAC) analysis.

    WHAT IS FREEZE DRYING?

    Fresh fruit are carefully cleaned and washed before the pulp is extracted. After the extraction, the pulp is then pasteurized and frozen. Once the pulp is properly frozen, it is submitted to very low pressure in vacuum chambers, where water is eliminated by sublimation. This dehydration method is called freeze drying. It is considered the genflest drying method, once the original nutritional profile remains almost intact.
